As I mentioned a week ago that soon I will publish the recipe of fresh pasta sauce.
How to prepare “Fresh pasta sauce” ?
Preparation time: 10-15 minutes
Cooking time: 60-90 minutes
Ingredients for pasta sauce
1. 2 kg fresh tomatoes
2. 1 chopped red/white onion
3. 6-8 cloves of garlic
4. 3 table spoons of salt (Don’t be too generous)
5. Cold pressed olive oil (It is least processed)
6. One table-spoon of sugar
7. One red capsicum (slice and dice)
8. One fresh chopped carrot
9. One table-spoon of red chilli powder (I prefer hot chilli powder)
10. Half tea-spoon of black pepper
11. Half diced green chilli
12. Couple dry red chilli
13. Half tea-spoon of oregano
14. 4-6 fresh basil leaves

3. Food processor of blender for tomato puree.
Grate the garlic and in the mean time heat olive oil in the pan. Add grated garlic, chopped onion and green chilli. Stir fry them until garlic and onion have started browning. Add one table-spoon of salt and mix it well. After add red capsicum and carrot, then stir fry over medium heat for 5-6 minutes. Leave the mixture aside.
Add all the other ingredients in a food processor or blend all the other ingredients together, except basil leaves.
Once the tomato puree is ready start heating it in a heating container or a bigger pan whichever is available to fit the puree.
Heat it for 20-30 minutes over open medium flame letting some of the water evaporate. You will notice the red color coming out of the puree.
Once this is done add the mixture of onion, garlic, capsicum, chilli and carrot to the pure, then cook for another 30 minutes or so over open medium flame.
When the sauce has become thick, add the basil leaves and a grated garlic clove for some extra flavor.
The sauce is ready.
